As the top-rated local morning show, WCCO Mid Morning was the perfect showcase for Chef Lundberg’s finely honed plating techniques – particularly given the notoriety host Jason DeRusha’s has earned the local food community as restaurant critic. Even better, the station’s state-of-the-art studio featured a fully functional kitchen and working sink – which, according to Chef Lundberg, is not always the case!
For the segment, Chef Lundberg created a flavorful chicken breast with herbed potatoes and bleu cheese croquettes – a gastronomical reinvention of the flavors of chicken wings – and then demonstrated the plating principles and techniques that make a dish shine. As you can see, he’s a natural on camera.
